Regular crochet is basically done one or two loops at a time, back and forth across the top of a row, flipping the work over each time you hit the end of the row to go the other way. Tunisian crochet uses a longer hook with a stopper on the back end as one finds on a knitting needle, and goes across the row picking up loops all the way, and then works those loops back off without ever flipping the work.
It's a pretty awesome difference, honestly; I wish I could show you in person, so you could feel the difference in thickness and drape and stretch. In lieu of that, some links:
